Today, we are going to learn how to make a perfect creamy garlic risotto. Let’s get started!
250g of chopped tomatoes
200ml of vegetable stock
1/2 tbsp of tomato paste
1/2 tbsp of olive oil
2 cloves of garlic
80g of Arborio rice
45ml of white wine
2 tbsp of heavy cream
3 tbsp of grated parmesan cheese
3ml of lemon juice
Salt and black pepper
1/2 tbsp of butter
15g of panko breadcrumbs
1/2 tsp of chopped parsley
15g of parmesan cheese
How to make creamy garlic risotto
Step 1: Put 250g chopped tomatoes, 200ml of vegetable stock, and 1/2 tbsp of tomato paste into a large heat-proof bowl. Then, mix them well and take the bowl to the oven to heat the mixture until it nearly boils.
Step 2: Chop 1 onion, and mince 1 garlic. Then, pour ½ tbsp of oil into the frying pan, and saute the onion, and garlic. Next, add 80g of Arborio rice, stir it, and pour 45ml of white wine. Then, pour the tomato mixture into the pan, and keep stirring it in about 20 mins.
Step 3: For this step, pour 2 tbsp of heavy cream, and add 3 tbsp of grated parmesan cheese, 3 ml of lemon juice, salt, and black pepper. Then, mix them well with a wooden spoon.
Step 4: On the other pan, melt 1/2 tbsp of butter, and add 1 minced clove garlic. Add salt and 15g of panko breadcrumbs, then stir it well until it has the brown color. It’s time to turn of the heat, and add 1/2 tsp of chopped parsley together with 15g of parmesan cheese.
Step 5: Put the risotto on a dish, then put the garlic breadcrumbs on the top of it. That’s how we make a perfect creamy garlic risotto. How easy and simple it is, but it is so delicious! I hope you will enjoy it!
