Ingredients
600ml Tempura Batter Mix
6 shrimps
400ml water
100 ml thick soy sauce
Oil
Ginger
Scallion
Radish
500ml water
100ml soy sauce
100ml sugar
100ml mirin sweet cooking seasoning
Bonita flakes
Instruction to make perfect Japanese fried shrimp tempura
Step 1: Put 600ml Tempura batter mix into a large bowl (bowl 1), and add 400 ml of water, then mix them well by a whisk. Next, pour half of the mixture into another bowl (bowl 2)
Step 2: Peel and devein 6 shrimps, and then make each of them straight
Step 3: For the sauce, add 100 ml thick soy sauce into the bowl 2, and stir them well.
Step 4: Turn the heat on and boil oil.
Step 5: Dip the shrimp into the bowl 1, then hold at the shrimp tail and pull it back and forth in the frying pan. Next, dip it into the bowl 1 one more time, and put it in the pan. Do the same steps with other shrimps.
Step 6: Until they have a golden cover, you can take them out of the pan, and serve them on a plate.
Step 7: Now, it’s time to prepare the sauce. First, cut ginger into slices, and chop a little bit of it, then cut scallion. Put scallion and chopped ginger into a small bowl, and sliced ginger into a pot.
Step 8: Rub radish and put into the bowl of ginger and scallion. Add 500ml water to the pot having ginger.
Step 9: Boil the water, add 100ml soy sauce, 100ml sugar, 100ml mirin sweet cooking seasoning, and bonito flakes. Until it boils, add it to the small bowl of scallion, ginger and radish. That’s done for the sauce.
